Whether it’s the weekend or a Tuesday, there’s always time for these Fluffy Hidden Raspberry Chip Pancakes! We woke up to over 13″ of snow and it’s still coming down like crazy. I literally couldn’t think of a better time for a fat stack of pancakes! Fluffy snow equal fluffy pancakes :). Also, if you know me, then it’s definitely not a secret that my favorite pancake mix is the insanely delicious Paleo Birch Benders. I’ve spent a great deal of time trying to find a pancake mix that isn’t loaded with unnecessary ingredients and sugar, and that’s why I keep going back to this one. It also has 7 grams of protein per serving! If you’re vegan, Birch Benders also makes an entirely plant based mix along with a few other varieties that are suitable for everyone’s diet and lifestyle. But back to my current favorite, all you need to do is whip up the batter, maybe whisk a dollop of your favorite plant-based protein powder for extra substance and you have the base of all my fluffy pancakes! Easy-peasy.
Fluffy Hidden Raspberry Chip Pancakes

Ingredients
- 1/2 cup Birch Benders Paleo Pancake mix
- 1 tsp baking powder
- 2 scoops of Orgain Plant Based Naturally Unsweetened protein powder (can omit, I just like the extra nutrients)
- 1 cup or so of water to thin (I don't measure this out, I just gradually add water until the batter is the consistency that I like for pancakes)
- 1 cup raspberries (fresh, frozen or freeze dried are all perfect)
- 1/2 cup or taste (gracious amount) of chocolate chips- we used minis!
- 1 banana, sliced
- 1-2 tbsp avocado or coconut oil (prefer these over butter because it has a higher smoke point)
Directions
- Step 1
- – In a medium mixing bowl, add Birch Benders pancake mix, baking powder and plant based protein powder, if using)
- Step 2
- - Gradually add in water to thin the batter and then set aside to thicken.
- Step 3
- - In a large non-stick skillet or griddle, add 1 tbsp of avocado oil over medium heat.
- Step 4
- - Once surface is rather hot, test it out by placing a small dollop of batter. If the batter set and starts to cook right away, you’re ready!

- - Using a spoon, (or I prefer a retractable ice cream scoop), add batter to pan.
- Step 6
- - Sprinkle about a tablespoon or so of raspberries in the middle of the pancake and then top with some chocolate chips.
- Step 7
- - Place a small amount of batter on top of the raspberries + chocolate chips so that they are covered and will not burn.
- Step 8
- - Reduce heat to low and cook pancake for about a minute or two.

- - I find that covering the pan helps cook the pancake really well allowing it to really fluff up and steam.
- Step 10
- - Once pancake is golden on a side, flip it and complete the steps again.

- - Add a few pancakes to your lightly greased pan/griddle until all batter and raspberries are used.
- Step 12
- - Layer pancakes on your plate of choice and top with sliced banana, extra chocolate chips and pure maple syrup!
