The best gluten free cornbread to pair with big bowl of Tuscan Sweet Potato White Bean soup or rather my version of an “Italian Wedding” style soup, if you wish. This cold front that were experiencing in Northern Michigan has us craving comfort food, mid April! This delicious combo is sure to do the trick and warm you right up and you’ll most likely be set with some leftovers, win-win.
Gluten Free Salted Bourbon Maple Cornbread Muffins
These cornbread muffins hit straight to the heart. They are perfectly savory, have crisp edges but a salty top and a soft inside. Not to forget, they are gluten free so make a double batch for everyone to enjoy and have seconds! They also freeze super well and are known to please even the pickiest of eaters, ahem, an almost 4 year old... Ella has been getting more selective lately with what she thinks she wants to eat, but these definitely won approval, so for that, they are worth sharing! Also, if you don't have any Bourbon Maple syrup, no worries. Just swap out for regular maple syrup! Trust me, you're going to want that extra maple touch in these.

Ingredients
- 1 cup almond flour
- 4 eggs (have not tried to swap for flax eggs)
- 1/3 cup plain greek yogurt
- 4 tbsp butter, softened OR coconut oil, lightly softened
- 1/2 cup corn flour (we used Bob's Red Mill but cornmeal would also be great, we didn't have any on hand)
- 1/4 cup Bourbon Barrel Aged Maple Syrup (or regular maple)
- 1 tsp baking powder
- sprinkle of sea salt
- green onions to sprinkle on top
- Maldon Sea Salt flakes to top
Directions
- Step 1
- – Preheat oven to 350 degrees.
- Step 2
- - Line muffin tray with liners.
- Step 3
- - Combine all the ingredients in a medium mixing bowl.
- Step 4
- - Thoroughly fold over and over until fully combined.
- Step 5
- - Add a handful of green onions into batter, optional.
- Step 6
- - Place about 2 tbsp of batter into each muffin liner.
- Step 7
- - Top with green onions and sea salt flakes.
- Step 8
- - Bake for about 22-25 minutes.
- Step 9
- - I suggest having them just slightly under baked and then removing them from heat right away to let them sit for about 5 minutes before eating.

- - Enjoy with some warm butter, a drizzle of honey (my fav) or placing right into your soup :).
