If you know me, then you know that I have a soft spot in my heart for gluten free pancakes. These gluten free peanut butter raspberry stuffed pancakes are just what you need on a sunny Sunday morning! Even if you’re not gluten free, these would be a stellar recipe to try. Peanut Butter Raspberry Stuffed Pancakes
So I know I have like a million different variations of pancakes on the blog, but guess what, it's not going to stop anytime soon! These gluten free pancakes hold an extra special place in my heart and are the perfect addition to a Sunday morning brunch or maybe for an upcoming snow day, because we all know it's not *too* far off...

Ingredients
- 1 cup of Birch Benders Paleo Pancake + Waffle mix
- 1 serving of plant based peanut butter protein powder
- 1 tbsp of ground flaxseed
- 1/3 cup water or so, just enough to thin to the right consistency
- 1 tsp baking powder
- 1/2 cup fresh raspberries
- 2 tbsp your favorite peanut butter (can sub out for almond butter)
Directions
- Step 1
- – Using a griddle or large skillet or nonstick pan, add 1 tbsp of butter of choice.
- Step 2
- - Turn the heat up to medium on your stovetop.
- Step 3
- - Then in a medium bowl, add your gluten free pancake mix, ground flaxseed and baking powder. Mix all of this together well.
- Step 4
- - In a smaller bowl, add the plant based peanut butter protein powder with some water or almond milk to make a thick mixture (should look like peanut butter, go figure!) *You can set this aside.
- Step 5
- - Next, add about 1/4 cup of your pancake batter to the heated pan. You may need to lower your heat just a tad, but keep it about medium.
- Step 6
- - Then add a dollop of the plant based peanut butter mixture on top of the pancake. Add another dollop of pancake batter, just enough to cove the peanut butter.
- Step 7
- - Flip the pancake after a couple minutes and it should be golden!

- - Do this until all the gf pancake batter is gone.

- - Then stack the peanut butter pancakes up and I added a small spoonful of peanut butter between each pancake.
- Step 10
- - Add your raspberries and top off with any extra peanut butter mixture and some pure maple syrup if you choose or some dairy free whipped cream!
