If there’s one thing that ridiculously easy to make and so rewarding, it has to be refrigerator pickles! I don’t know about everyone else, but we had SO many cucumbers this summer and what better way to put them to use then to turn into pickles?! Ella and I both love pickles, so this was kind of a no brainer.
The Easiest Refrigerator Pickles!
If you love pickles, then this recipe was made for you. So freaking easy and will save you $$ and trips to the store to get more pickles ;). Hope you enjoy these!

Ingredients
- 1-1/2 cups apple cider vinegar
- 3 tbsp kosher salt
- 2 tbsp coconut sugar
- 2 cups cold water
- ~ 2 lbs, maybe more of cucumbers + cornichon (baby cucumbers), and then slice or halved/speared (whichever you prefer)
- - 1 large red onion, thinly sliced
- 1/4 cup homemade picking spice {2 tablespoons coriander seeds + 1 teaspoon mustard seeds + 1/4 teaspoon red pepper flakes}
- - 6 large garlic cloves, peeled and halved
Directions
- Step 1
- – Combine your apple cider vinegar, salt and sugar in a medium saucepan).
- Step 2
- - Turn heat to medium-medium high and whisk the salt and sugar in until they are dissolved.
- Step 3
- - Then add in your sliced red onions.
- Step 4
- - After that, remove from heat and add in the cold filtered water, whisking it. Put this brine in the fridge until you’re ready to add the cucumbers to it.
- Step 5
- - Next add your sliced cucumbers to the jars that you’ll be using. I love using Weck Jars or any large Ball jars.

- - After that, add your chilled brine so that they each have a pretty equal amount. Then add in the fresh garlic cloves.
- Step 7
- - All that’s left is to seal your jars and place them back in the fridge for at least 24 hours and then you can enjoy them!

- - I’m honestly not sure how long they will last in the fridge, but we always go through them within a couple weeks, max!
