Are you a morning person, or more of a night owl? I’m more of a night owl I’d say, but I love looking forward to each morning and making breakfast. I have never been someone who’s internal clock forces them to wake up early, unfortunately. I keep trying to wake up a bit earlier each day, but my body doesn’t function well until it’s had a couple cups and coffee and the sun is up. When it comes to breakfast foods, I am all ears. I love a good breakfast spread, especially on a Sunday; who doesn’t?
However, I know everyone’s morning routine is different, but ours is pretty consistent for the most part. Starts off with Rainbow (our orange kitty) jumping on top of our bed, Ella looking for daddy, and then transitioning downstairs to make breakfast. When it comes to making breakfast for all of us, oats are usually the go-to. I try and drink at least one large ball jar full of ice water before anything else, aka, coffee. Sean is the in-house barista, and makes the most beautiful almond milk lattes. While he makes the coffees, I start the oats on the stovetop, maybe pop a waffle or mini banana oat pancake or three in the toaster for Ella, and down my water. Ella is pretty much a creature of habit when it comes to breakfast. She loves pancakes, waffles and occasionally a little bowl of oats. On Sundays, I like to make a brunch and sometimes make a double batch of pancakes so that they can be reheated throughout the week easily.
From here, I hope you can find some delicious recipes to try out and add to your morning routine. Some of our favorite “sweet” go-to’s are vegan chocolate chunk peanut butter pancakes, baked cinnamon roll baked pancake bowl, vegan vanilla bean pancakes with whipped chocolate fudge filling, banana oat almond butter pancakes, raspberry buckwheat waffles with bourbon maple syrup and vegan blueberry muffin oat bowl! When it comes to “savory” ideas, that’s Sean’s area of expertise. I am personally more of a sweet person in the mornings and like having something savory like eggs and such for lunch.

So now that you’ve got an idea of what we do for breakfast, I’m curious what your go-to breakfast is! Are you someone who enjoys eggs and toast for breakfast, or perhaps mashed avocado, eggs and bacon, crispy potatoes, granola and yogurt? It’s always fun finding out what others enjoy. But, if I were to have to pick one kind of breakfast food to eat for the rest of my life, it would probably be some form of “oat bowl” or pancakes, but pancakes just seem super extra to make every morning (haha)…oh, and copious amounts of coffee 🙂
