I might be the odd one out on this one, but I think the best squash out there is delicata. I am borderline obsessed with anything delicata, and my favorite way to make it is most likely air fried. There’s just something so amazing about how it crisps up so well in the air-fryer but doesn’t dry out the squash itself. Don’t get me wrong, it’s delicious in the oven, roasted, but the air-fryer has been my go to for a lot of the same recipes, just in half or a third of the time. This air-fried delicata plus a crisp apple salad with a honey mustard dressing drizzle is the epitome of fall in a bowl. It’s also a great dish to make for Thanksgiving or other family and friend get togethers. Just double or triple the size and you’re in business for a healthy and nutritious side.
Pro-tip: next time I make this salad and dressing I’m definitely going to thin in out a bit, since it was pretty thick and chunky ;). I’ll add the newly revisioned one below :).
Airfried Delicata + Crisp Apple Salad w/ Warm Honey Mustard Dressing

Ingredients
- 1-2 delicata squash
- 1 red onion, sliced
- 2 crisp apples, we used honeycrisp (but a gala would also be great)
- 1 head of kale, chopped
- 3 tbsp pumpkin seeds, or pistachios!
- 1-2 tbsp Garlic Expressions dressing and marinade
- 1 tsp salt
- 1 tsp black pepper
- Honey Mustard Dressing (with a spicy kick)
- 1/4 cup yellow mustard
- 3 tbsp honey
- 1 tbsp olive oil
- 1 tbsp Garlic Expressions
- 2 tbsp lemon juice
- 2 tsp garlic powder
- 1/4 tsp cayenne pepper, or a sprinkle of red pepper flakes
- pinch of salt
Directions
- Step 1
- – Preheat air fryer to 400 degrees. (You can also use a regular oven and preheat to 400 degrees, too).
- Step 2
- - Slice your delicata squash length wise and then scoop out the middle seedy part with a spoon. Then slice into about 1″ pieces.
- Step 3
- - Line a baking sheet with parchment paper, or grease the basket of your air fryer with a light spray of avocado oil.
- Step 4
- - Add your delicata squash to your air fryer and drizzle 1-2 tbsp of Garlic Expressions over it. Then sprinkle with salt and pepper. Shake the basket of the airfryer a bit so that all the squash are well coated.
- Step 5
- - Airfryer for about 12-15 minutes, but checking at about the 6-8 minute mark and shaking the basket. (Do the same with the oven, but around the 15-18 minute mark.
- Step 6
- - After about 8 minutes, add the sliced red onion to the airfryer.

- - Then make the Honey Mustard (spicy) dressing. In a small saucepan over the stove, add the yellow mustard, honey, olive oil, Garlic Expressions, lemon juice, garlic powder, cayenne pepper powder, and a pinch of salt.

- - Whisk this together until it’s fully combined and super smooth, then turn the heat off, but don’t take off the burner.

- - After that, slice your apples and set aside.

- - Next, add your chopped kale to your salad bowl(s) and divide the delicata squash between the bowls. Then top with red onions and sliced apples.

- - Then, sprinkle with pumpkin or pistachio seeds.

- - Drizzle with the warmed honey mustard dressing and enjoy immediately :).
