TGIF! Here’s my new favorite combination that I’ve been enjoying in the morning. It’s everything you like about pancakes, but with less clean up and in a bowl…! So thick and fluffy, but not too dense. Such a great staple to give a try. I love having berries in the morning, and with the addition of chocolate and maybe a few walnuts, you really can’t go wrong. This Baked Berry and Chocolate Chip Pancake Bowl is perfect for your weekend activities, or super easy to whip together during the week. Always gluten free, easily vegan if you opt for vegan chocolate chips, and seriously addicting. This pancake bowl can do no wrong!
Baked Berry and Chocolate Chip Pancake Bowl
If you're someone who absolutely loves pancakes but dreads the clean up, then this was made for you. This baked pancake bowl is highly customizable and delicious. I love to make these for Ella and hope that she keeps most of the pancake inside the bowl, rather than all over the floor (usually it works, otherwise Rainbow is the clean up crew). Loaded with fresh or frozen berries, a hefty handful of mini chocolate chips, maybe a few nuts or so, and you're in business. Drizzle with a healthy amount of pure maple syrup and you'll be one happy camper.

Ingredients
- 1/4 cup Birch Benders Paleo Pancake + Waffle Mix
- 1 serving plant based protein powder (or can omit and use additional 1/4 cup pancake mix)
- 1 tsp baking powder
- 1/3 - 1/2 cup water to thin (slowly add liquid to mixture to watch for the right consistency - you want it to be super thick)
- 1/2 cup fresh or frozen berries (I used a frozen organic blend from Costco with blueberries, raspberries and blackberries)
- handful of mini chocolate chips
- small handful of walnuts
- coconut oil to grease bowl
- maple syrup to drizzle
Directions
- Step 1
- – Preheat oven to 350 degrees.
- Step 2
- - In a medium sized bowl, add pancake mix, protein powder if using and baking powder.
- Step 3
- - Gradually add water to thin to the right consistency.
- Step 4
- - Toss in half the berries, chocolate chips and walnuts.
- Step 5
- - Mix together well.
- Step 6
- - Lightly grease the oven safe bowl with coconut oil.
- Step 7
- - Fold the pancake batter into the bowl.
- Step 8
- - Sprinkle with the remainder of berries and chocolate chips, if any.
- Step 9
- - Place in the oven and bake for about 20 – 25 minutes, depending on your oven. It’s super thick so it takes longer than normal, but it’s SO good and definitely worth the wait.

- - Once cooked, poke with a fork to make sure the center is solid and remove from oven.

- - Drizzle with maple syrup and enjoy your PANCAKE BOWL :).
