Roasted Garlic Rosemary Chickpeas
I have always been a huge fan of chickpeas, but it wasn't until about a year or so ago that I discovered roasting them!! It turns them into the most perfectly crispy snack, salad topper, pasta finisher, quick appetizer...you get the idea. There's so many different ways to season them, the list is actually endless.

Ingredients
- 1 can of organic chickpeas (can easily double the recipe)
- 1 tbsp oil of choice (we prefer avocado)
- 1 tbsp garlic rosemary spice blend (or can make your own)
- 1 tsp Maldon sea salt flakes (or to taste)
Directions
- Step 1
- β To ensure that you get super crispy chickpeas with that ultimate crunch factor, make sure to rinse them and pat them completely dry.
- Step 2
- - I like to take two tea towels or paper towels and put one under the chickpeas and then one on top and roll back and fourth a few times to make sure most of the moisture is absorbed.
- Step 3
- - Preheat oven to 400 degrees
- Step 4
- - Line a large baking sheet with parchment paper
- Step 5
- - In a medium sized bowl, add the dry chickpeas and oil and seasonings. (Itβs super ideal if you have one with a lid, or can even use a plate over the top and be super careful)
- Step 6
- - Toss the chickpeas so they are fully coated in seasonings.
- Step 7
- - Lay them out on baking sheet to make sure that they spread out and not overlapping to ensure that they all cook evenly.
- Step 8
- - Roast for about 30 minutes, tossing them at the halfway mark.
- Step 9
- - Once they are all golden and crispy, remove from the oven and let chill for 5 minutes.
- Step 10
- - Enjoy on salads, soups, pasta dishes, and all of the above.
- Step 11
- - They should be stored in a glass container the fridge and should stay fresh for up to a week! But I doubt they last that long π
