When it comes down to making dinner, I’m always so much more excited when Ella loves it, too. She is constantly requesting that I make these roasted rainbow carrots, and I definitely can’t blame her. The carrots are so beautiful and taste like candy, seriously! We absolutely love getting a weekly CSA box from this amazing farm just a few miles down the road from us. Every once in a while we are surprised with some gorgeous rainbow carrots and I know better than to try to make anything else other than these simple roasted carrots!
Roasted Rainbow Carrots - An Ella Fav!
I can't be the only one that does a happy dance when their toddler gets so excited for vegetables. These roasted rainbow carrots are ones to please, for sure. Super simple and delicious and is the perfect side for all the savory fall plates :).

Ingredients
- 2 bunches of freshly washed rainbow carrots (or regular carrots), sliced
- 2 tbsp avocado or olive oil
- kosher salt to taste
- 1-2 tbsp honey
- 1-2 tbsp minced garlic (depending on how garlicky you'd like them--we love garlic)
- freshly cracked black pepper to taste
Directions
- Step 1
- – Preheat oven to 400 degrees.
- Step 2
- - Line your baking sheet with some parchment paper, or thoroughly coat with some olive oil or avocado oil.
- Step 3
- - In a large bowl, add your sliced carrots with the oil of choice, kosher salt, black pepper and minced garlic.
- Step 4
- - Toss the carrots so they are well coated and then transfer to lined baking tray.
- Step 5
- - Place in the oven for about 20 minutes, I like to shake the tray about half way to make sure they are roasting rather equally.
- Step 6
- - Once they are crispy, add 1-2 tbsp of honey and place back in the oven for about 5-8 more minutes.
- Step 7
- - After they look well roasted, remove from the oven and let them chill before devouring them ! These make the best side dish, or are amazing all on their own.
