Flourless Peanut Butter Chocolate Chunk Squares
The most amazingly delicious snack to have ready for times when you need a little pop of sweetness. Bonus points if you have a little munchkin to prep almost all the work for you ;). Such a sweet and simple recipe that can help keep the little ones busy. The combination of quick oats and the peanut butter just really hit the spot, every time. There's also additional hidden plant protein in these, you can either keep it in there, or swap out 🙂 Hope you love!

Ingredients
- 1 flax egg
- 1 cup creamy peanut butter (can sub for your fav nut butter)
- 1/2 cup maple syrup
- 1/4 cup applesauce
- ¼ cup coconut oil, melted and cooled
- 1 teaspoon vanilla extract
- 1 cup gluten-free quick oats, we love One Organic!
- 2 scoops vegan chocolate protein powder, can sub out for 1/2 cup oat flour!
- 1 teaspoon baking powder
- pinch of salt
- chocolate chips, but measured with soul (or have a 4 year old measure) 🙂
Directions
- Step 1
- – Preheat your oven to 350 degrees and line a baking dish with parchment paper, or use a mini square loaf pan. We had this cute little square baking dish that holds 12 squares that never gets used. Make sure to thoroughly grease, otherwise they will be very difficult to get out.
- Step 2
- - In a small bowl, make your flax egg (1 tbsp ground flax with 3 tbsp water, whisk and set aside for a few minutes.)
- Step 3
- - In a larger mixing bowl, add the creamy peanut butter, maple syrup, applesauce, and melted but cooled coconut oil together. Drizzle in vanilla extra until batter is smooth.
- Step 4
- - In another bowl, add the gluten free quick oats, plant based chocolate protein powder or oat flower is omitting plant protein. Then add in baking powder and salt and fold together again.
- Step 5
- - Next, add your dry ingredients into the wet ones and fold together until fully combined.

- - Then add in your chocolate chips

- - After that, evenly distribute the batter into your choice of baking dish(es). Pro tip: we used a larger ice cream scooper and lightly sprayed with avocado oil so the batter comes out SO well each time. Makes life so much easier! Batter will be extremely sticky.

- - Add a few more chocolate chips on top for extreme happiness.

- - Transfer to preheated oven and bake for about 20 minutes or until edges start to become golden!

- - Once cooked, remove from the oven and allow the bars to cool (about 10 minutes at least) and then carefully remove from baking dish(es). I think they are best served warm :).
