So you’re probably thinking, “Hannah is making a recipe with sausage?!” At least that’s a lot of the comments that I got back. These were a fun experiment for a Sunday breakfast. I personally didn’t eat these, but I know a handful of others that did and thoroughly enjoyed them :). Super easy and flavorful, and definitely a good addition to a Sunday breakfast/brunch spread!
Gluten Free Honey Cornbread Muffins w/ Jalapeño Sausage, Sweet Onions, Thick Cheddar and Flaky Salt!
To sum up that ridiculously long title, these are loaded up breakfast muffins that are sure to please your loved ones 🙂

Ingredients
- Cornbread
- - 1 cup almond flour
- - 1 cup cornmeal (make sure it's gf!)
- - 2 tsp baking powder
- - pinch of salt
- - 1/2 cup unsweetened applesauce
- - 3/4 cup almond milk
- - 1/4 cup honey
- - 3 eggs (have yet to try with flax eggs)
- Savory skillet mixture
- -1 large sweet onion, sliced and diced
- - half pound - 1 lb of sausage
- - 1/2 jalapeno, diced
- - 1 cup of thick cheddar
Directions
- Step 1
- – Preheat oven to 350 degrees.
- Step 2
- - Line muffin tray with parchment paper liners ands set aside.
- Step 3
- - In a large bowl, whisk together the dry ingredients for the cornbread (almond flour, gf cornmeal, baking powder and salt).
- Step 4
- - Add the wet ingredients into the dry (unsweetened applesauce, almond milk, honey and whisked eggs). Set aside.
- Step 5
- - In a small pan, add your sausage and cook it down until it’s rather browned.
- Step 6
- - Add in the sweet onions and sauté until golden.
- Step 7
- - Transfer sausage and onions into the cornbread mixture and fold together.
- Step 8
- - Add in diced jalapeno and the thick cheddar shreds.
- Step 9
- - Divide batter between muffin tins and bake for about 18-20 minutes, or until golden brown.
- Step 10
- - Once cooked, remove from oven and top with flaky sea salt.
- Step 11
- - Let cool for about 5-10 more minutes before enjoying!
