Well guys, here’s another gluten free pancake recipe, but don’t worry, it’s totally worth being shared. These gluten free Pumpkin Chai pancakes turned out so freaking well. They were ridiculously thick and fluffy and full of the most delicious flavor. If I’m being completely honest, I’m not the biggest pumpkin-spice fan but I do love a good pumpkin chai flavor combo.
GF Pumpkin Chai Pancakes
Move over pumpkin spice, this is the real deal when it comes to fall pancakes.

Ingredients
- 1/2 cup Birch Benders Paleo Pancake + Waffle mix
- 1 serving of Team Vega Vanilla Plant Based Protein
- 1 flax egg (1 tbsp ground flaxseed + 3 tbsp warm water)
- 1/3 cup pumpkin puree
- 3 tbsp water or almond milk (might not need depending on how thick your pumpkin puree is)
- 1/4 cup Fage Greek Yogurt
- homemade chai spice blend {2 tsp cinnamon + 2 tsp monk fruit sugar + 1 tsp nutmeg + 1 tsp cardamom + 1 tsp ground allspice + 1 tsp cloves and 1 tsp ginger}
- 1 tsp baking powder
- 1 tbsp ghee
- drizzle of maple syrup
Directions
- Step 1
- – In a medium bowl, add the gf pancake mix, all of the homemade chai spice blend except 1-2 tsp, vanilla plant based protein powder, flax egg, pumpkin puree and almond milk/water.

- - Add in the baking powder and stir together, then put it aside to let it thicken.
- Step 3
- - In a skillet or nonstick pan, add 1 tbsp of butter or ghee over medium heat.
- Step 4
- - Add 1/4 cup batter to pan and lower heat to about low-medium low.
- Step 5
- - Flip after a few minutes, after you can see that the pancakes are browning up nicely.

- - Once all the batter is used, then assemble your stack.

- - Add pancakes to your plate(s) and then top with whipped Fage greek yogurt.

- - Take your greek yogurt and the last remaining portion of the chai spice blend, and whip it into your yogurt.

- - Then add your spiced yogurt to the top of your pumpkin chai pancakes and drizzle with maple syrup!
