When it’s middle of the week and you have an abundance of summer squash and zucchini, you end up whipping something super easy and colorful. We love Banza pasta over here, but any pasta that you would like would work well here. Ella just insists on “no corners” aka elbows and is a big fan of this gemelli. She honestly ate two heaping bowls of this pasta, which stunned me a little. So if a four year old can dig it, I bet you will too ;).
The sweet and savory combo in this meal just leaves you coming back for more with every bite.
Gluten Free Sweet + Savory Gemelli Pasta w/ Spicy Honey & Thai Basil
The sweet and savory pasta dish that keeps bringing you back for more! Super quick with minimal clean up and is the most perfect way at using up some of those beautiful garden goodies.

Ingredients
- 3-4 summer squash + zucchini (sliced in half moons)
- 1 bundle of kale (washed, trimmed and cut down)
- drizzle of Garlic Expressions (2-3 tablespoons), bonus points if you get a couple cloves of garlic!
- 1/4 cup + extra, shaved parmesan cheese for topping
- 2 fully cooked Beyond Meat spicy Italian brats (I sliced them up and tossed them in the pasta for extra plant based protein)
- 1/4 cup Thai basil
Directions
- Step 1
- – In a large pan on the stove, add Garlic Expressions, and sliced zucchinis/summer squash.
- Step 2
- - Sautéed veggies for about 5-10 minutes until very golden.
- Step 3
- - Next, boil the water for your pasta. Once boiling, add in your pasta, and if cooking gluten free, make sure to check frequently since it cooks faster. I’d rather have a little more al dente pasta rather than super soft, mushy pasta.
- Step 4
- - Begin to cook your choice of protein, I used Beyond Meat brats and then add them to the veggies once thoroughly cooked.
- Step 5
- - Add the chopped kale into the pan with the other veggies and then reduce heat to low/simmer and place a cover on top.
- Step 6
- - Once pasta is cooked to liking, drain, rinse and then add straight into your pan with the sautéed veggies.
- Step 7
- - Transfer your sliced protein into the pasta and gently toss together.

- - Remove pan from heat and add a hefty drizzle of balsamic reduction and spicy honey. If you’re hot looking for any heat in this meal, you can definitely use regular honey, but I think the sweet and spicy flavor combo really brings this dish together. I used Grand Traverse Sauce Company Spicy Hot Honey in this.

- - Next, sprinkle in fresh Thai basil (including the flowers, if possible!)

- - Toss a healthy handful of shaved parmesan on top of pasta and serve after! 🙂
