Look no further, this is hands down the quickest way to enjoy a bowl of oats on the go or even better, curled up next to a cozy fire in the dead of winter. The best part, this can be thrown together the night before so that you can literally wake up and roll into the most delicious breakfast. Simple, easy and filling, these overnight oats are loaded with all the goodies and will keep you full until lunch, easily! Also, if you’re like me, you sometimes make too much coffee…sometimes ? You should save that coffee for these oats! When I’m not having an almond milk latte, I’m using opting for a pour over with hazelnut coffee from Leelanau Coffee Roasting Co. I put the extra coffee in a glass jar in the fridge so I can either make a cold brew the next day, or better yet, make these oats.

Hazelnut Mocha Overnight Oats

Ingredients
- 1/4 cup gluten free sprouted oats - I love One Degree Organics
- 1 cup hazelnut coffee or non coffee of choice
- 1 tsp Ceylon cinnamon or to taste
- 1 tbsp maple syrup (can leave out!)
- 1 tbsp black cocoa powder
- 1 tbsp unflavored pea protein - I use Anthony's Goods off Amazon
- 1 scoop (30 grams) of BEAM Vegan Chocolate Fudge Brownie protein powder
- 1/2 sliced banana
- 1-2 tbsp mini dark chocolate chips/chunks
- 2 tbsp PBfit Organic Peanut Butter Powder or 1 tbsp of organic peanut butter of choice ( I love Santa Barbara's smooth and crunchy peanut butter)
Directions
- Step 1
- – In a glass ball jar, or container with a tight fitting lid add gluten free oats and cinnamon
- Step 2
- - Add the coffee of choice and stir the oat mixture together
- Step 3
- - Sprinkle in cinnamon
- Step 4
- - Drizzle in maple syrup or sweetener if using and stir together again
- Step 5
- - Add in black cocoa powder and unflavored pea protein (can leave out extra pea protein)
- Step 6
- - Stir together again and add extra liquid (water, coffee or nondairy milk if needed)
- Step 7
- - Put the top on the jar and place it in the fridge overnight to set.
- Step 8
- - In the morning, add overnight oat mixture to a bowl and add the sliced banana, mini chocolate chips/chunks and peanut/almond butter of choice)
- Step 9
