This was hand’s down the best banana bread that I’ve ever made. We had a handful of bananas that went too fast and it was the best timing for some gluten free banana bread. I however did end up with 6 loaves of bread, but I’ll slim the recipe down so that you don’t end up with that much ;). I mean, you know it’s a winner when your toddler goes crazy over it, and literally ate two pieces without letting the bread cool down. She said it was “better than ice cream”, and in Ella talk, that’s rather unheard of. So if you didn’t already have huge weekend plans, now you do!
One Bowl Salted Chocolate Banana Bread
The easiest recipe you will find in a hot minute! I know you probably have some bananas on your counter that have been looking at you disgusted. This is the perfect way to put them to use. This bread also freezes really well, but I honestly don't think you'll have the need to do that. It's so freaking good, it's actually scary.

Ingredients
- 1 1/2 cups of almond flour
- 1/2 cup gluten free AP flour (we love Bob's Red Mill 1:1)
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tsp monk fruit sugar (mix this and the cinnamon together
- ))
- 1 pinch of sea salt
- 2-3 large ripe bananas, mash them all up!
- 2 fresh eggs
- 1/3 cup maple syrup or Lakanto maple syrup
- 1/2 tsp vanilla extract (we also used an entire vanilla bean and scooped out the inside, it's a huge game changer)
- mini chocolate chips, but make sure to have a toddler measure so you get the most accurate amount.
- Maldon sea salt flakes to top (top generously)
Directions
- Step 1
- – Preheat oven to 350 degrees.

- - Line a baking bread pan with parchment paper (trust me, it’s so much easier than just greasing one)
- Step 3
- - In a large bowl, add your mashed bananas, eggs, maple syrup and vanilla extract.
- Step 4
- - Then add in gradually your gluten free AP flour, almond flour, baking soda, cinnamon, sugar of choice and pinch of sea salt.

- - Mix the ingredients together until fully combined. Then have your toddler, or yourself, add in all the chocolate chips. We love using mini chocolate chips over here

- *Make sure to continually fold because sometimes it can get tricky with it all being only in a single bowl.

- - Then, transfer the banana batter into the lined baking dish and sprinkle another hefty amount of chocolate chips on top, you know, for good measure.

- - Then you can finally put in the oven and bake for about 40 minutes.

- - You’ll know it’s fully cooked if you put a tooth pick or fork or knife in the center and it comes out “rather” clean. We do love a soft center, just 95% cooked

- - Then remove it from the oven and sprinkle with Maldon sea salt flakes.

- - I went heavy on the sea salt flakes, and it was the best decision.

- - Let it cool for about 15 minutes before you remove it from the baking pan and then slice it.
