Happy belated St. Patrick’s Day! Hope everyone had a fun day, however you decided to spend it. Sean has been on the search for a real, authentic corned beef dinner, so we opted for making it at home. A first for us and super fun! Paired it with the traditional cabbage, potatoes and carrots from our local CSA box and it was the real deal. I decided to share my portion of corned beef with Rainbow, he really appreciated it ;). However, I have been loving this new smoothie combination that I randomly came up with and it’s the most vibrant green! Only seems right to share it for St. Patty’s day, or a day later. It kind of reminds me of a “Shamrock Shake” but I’ve never been a person who likes them. This is a fun twist on a shake-like smoothie that thick and creamy. I know you’re probably like, another green smoothie…but trust me, it’s so smooth and delicious that you’ll be hooked in no time. Think of it as healthy base for all the Irish food you will consume, or just a great blend of nutrients for any day of the week. There’s a secret ingredient inside that gives it the most beautiful green color. Plus, it’s super simple and ready in less than 5 minutes!
Refreshing Minty Green Smoothie

Ingredients
- 2 large handfuls of fresh or frozen spinach
- 1 banana (preferably frozen)
- 1/2 cup peaches
- 2 tsp turmeric powder (linking our favorite)
- 1 serving BEAM Peanut Butter Smoothie Plant Based Protein (or your favorite)
- 1 tbsp peanut butter or almond butter
- 2 heaping tsp spirulina powder
- 1 tsp mint extract
- 2 tbsp cacao nibs
- 1 tbsp flaxseed meal
- 1 cup almond milk + more to thin (should be thick and creamy!)
- 1 tsp matcha (optional, but great for an extra kick!)
- top with homemade gluten free granola (optional of course, but always so good)
Directions
- Step 1
- – In a high speed blender, add the frozen banana first! (gives a good base for blending)
- Step 2
- - Add the spinach, peaches, turmeric powder, plant based protein powder/powder of choice, spiraling, nut butter, mint extract, flaxseed, cacao nibs and 1/2 the almond milk . Start on low speed and turn up to medium.
- Step 3
- - Add in matcha if using and remainder of almond milk.
- Step 4
- - Blend on high for about 30 seconds.
- Step 5
- - Pour into glass(es) and enjoy as is or with granola topper!
