What’s better than breakfast tacos on a Sunday morning? I’m honestly more of a sweet vs savory fan in the morning, but every once a in a while I surprise myself and crave something more savory. You have probably picked up on that, though. Pancakes, waffles and all the different oat variations are my love language in the mornings. Otherwise, I am always in the food for Sean’s French styled omelettes, but who isn’t?! 🙂 These delicious breakfast tacos are so utterly tasty and ridiculously quick, so it makes for a win/win situation.
Sunday Mornings Breakfast Tacos w/ Carmen Peppers, Sweet Basil + Cherry Salsa
If I'm going to have a savory breakfast, this is going to be it. The carmen peppers were received in our weekly CSA box were oh so beautiful I had to do something special with them, and they packed so much flavor in these tacos! Loaded them up with some diced jalapeno, a plentiful amount of sweet basil and lots of cherry salsa! I love using Siete Foods cassava flour tortillas for tacos. They hold up so well and I prefer the texture of them more, then compared to corn tortillas. Give these beauties a try and let me know what you think 🙂 Happy Sunday eating!

Ingredients
- 3-4 carmen peppers, sliced and diced
- 1 jalapeño, diced (less or more depending on heat factor you'd prefer)
- 3-6 tortillas (lightly warmed up on a skillet or oven range for about 10 seconds per side)
- 4 large eggs, whisked
- salt and pepper to taste
- splash of almond milk
- 1-2 tbsp Garlic Expressions dressing and marinade
- 1 large handful of packed sweet basil
- 1-2 tbsp cherry salsa per taco, or salsa of choice!
Directions
- Step 1
- – In a bowl, whisk your eggs with some salt and pepper, and a splash of almond milk (we like using Califia barista edition because it’s a little thicker and creates a creamier egg situation)
- Step 2
- - In a non stick skillet, add 1-2 tbsp Garlic Expressions and your sliced and diced carmen peppers. Sauté them until a little on the softer side. Add in the diced jalapeños if using.
- Step 3
- - Once peppers are sautéed to your liking, add whisked egg mixture.
- Step 4
- - I like a soft scrambled egg, so I add them to the skillet over medium heat to start.
- Step 5
- - Then using a silicone spatula, stir lightly until eggs are moist and just beginning to set. The peppers added in will make it a little trickier to get the most perfect soft scrambled eggs, but they will be close.
- Step 6
- - After that, remove from heat and they will continue to cook, but just stirring sparingly until eggs have just set into soft curds.
- Step 7
- - Then add a few spoonfuls onto your warmed tortillas and top with cherry salsa and sweet basil!
- Step 8
- - Enjoy immediately and have a Sunday Funday while you’re at it :).
