I can’t be the only one craving all the sunshine and warmth in the middle of February, in Michigan…With days finally starting to get longer, I can’t wait to spend more time outside and find more fresh fruit. Fresh fruit is one of the things I miss the most in the winter. There’s just something so special about fresh, local fruit in the summer and fall months. We are huge blueberry and strawberry fans over here, but there’s something so beautiful about citrus fruit. This past year, Ella and I spent quite a bit of time going on bike rides to the soccer field. It was a fun activity that gave us both some fun exercise, and let us soak up all the fresh air. She looked forward to it more than anything and it got us out of the house (covid win), which I was very grateful for. She would ride in the Burley attached to the back of my bike and I would pack a snack filled picnic and we would hang out for quite a while, or until the snacks ran out..!
Now that it’s February, and it’s cold, like single digit cold, I’m definitely looking forward to brighter things, like these Sunshine Slices! Aka, peeled clementines dipped in dark chocolate, topped with my easy homemade gluten free granola and sprinkled with sea salt flakes. Sunshine Bites is just much easier to say and sound fun.
Sunshine Slices

Ingredients
- - 1 to 3 clementines (any kind of fresh citrus would work well!)
- - 1/4 cup dark chocolate chips
- - 2 tsp coconut oil
- - 1/4 cup homemade gluten free granola
- - sea salt flakes
Directions
- Step 1
- – Peel your citrus
- Step 2
- - Line a baking sheet or plate (single serving) with some parchment paper
- Step 3
- - Melt your chocolate (combine dark chocolate chips + coconut oil in a glass bowl and microwave for about 1 minute, stirring halfway)
- Step 4
- - Dip each piece of citrus into the melted chocolate and lay on parchment paper.
- Step 5
- - Do this until all the citrus is coated in chocolate.

- - Sprinkle homemade granola over the chocolate.

- - Shake a little bit of sea salt flakes on top of the granola + chocolate mixture.

- - Set in the fridge for about 10 minutes to set.

- - Take out and peel off parchment paper and devour. SOO GOOD!

- *Hint: make a double batch at least.

- ** These freeze really well! Put them in a glass container lined with parchment paper in the freezer for times when you just want a few quickly. They melt in your mouth!
