Anyone else a huge fan of warm salads? I sometimes prefer them over room temp or “cold” ones. This combination of roasted butternut squash, fresh greens, caramelized onions, a few dollops of garlic goat cheese and even a poached egg on top is perfection, in my eyes. If you have an air fryer, then I totally recommend using it for this recipe. I love using our air fryer for just about anything, but especially for root veggies, butternut squash and sweet potatoes, just to name a few ;).
If you’re new to butternut squash then this is a great way to become obsessed with it. I used to be super intimidated by butternut squash because it looked like so much work for the small yield at the end. I have found an easier way of prepping it now, which makes it a dream! Add some fresh greens in a bowl, I like the addition of chopped kale, but chard would also be good, arugula is amazing, or just an overall mix of greens would be tasty!
Overall, this combination of the crispy garlicky butternut squash, caramelized onions with shallots and garlic and fresh chopped kale is the ultimate salad. I swear it tastes and even looks like a super expensive salad, but realistically it’s so simple and incorporates seasonally available vegetables, which is really good for your body! Even if you’re not a vegetarian, this is a super versatile salad that you can switch up and all whichever protein(s) you like. I’m a huge fan of adding a sliced Beyond Meat brat on top, poached egg, roasted chickpeas or some blackened salmon! I bet a hard boiled or (pickled ;)) egg would be tasty in a pinch, and even some grilled chicken. So, like I said, there really is no wrong way to serve up this salad and I would be shocked if you have any leftovers.
Warm Roasted Butternut Squash Salad

Ingredients
- 1 medim to large butternut squash
- 2-4 bundles of fresh kale (or mix of greens)
- 1 sweet onion, sliced (or 4 medium to large shallots!)
- 3 cloves of garlic, minced
- 1-2 tbsp olive oil
- Garlic Expressions dressing + marinade
- Idyll Farms garlic herb goat cheese
- balsamic glaze (optional, but SO good)
- * extra protein of choice: beyond meat brat, poached egg, roasted chickpeas, salmon, chicken, etc! (optional)
- salt and pepper to taste
Directions
- Step 1
- – Preheat oven to 425 degrees, OR preheat air fryer to 400 degrees. I used our air fryer and they turned out perfect.
- Step 2
- - Using a vegetable peeler, carefully peel all the skin off your butternut squash.
- Step 3
- - Sometimes I place the butternut squash in the microwave for 1:30 seconds wrapped in a moist paper towel or kitchen towel to make this step easier!
- Step 4
- - Once all of the skin is removed, slice it horizontally and remove all the seeds.
- Step 5
- - Then cube the rest of the butternut squash and place it in your oven or air fryer.
- Step 6
- - Give the squash a hefty drizzle of Garlic Expressions dressing + marinade and toss the squash around so that it’s well coated.
- Step 7
- - Set timer to 10 minutes for your air fryer or 20 minutes for you oven.
- Step 8
- - In a non stick pan, add olive oil and the sliced onions & shallots.
- Step 9
- - Sauté the onions and shallots until well caramelized, then set aside.
- Step 10
- - Rinse and chop your kale or greens of choice.
- Step 11
- - Add the kale/greens to your pan with the caramelized onions/shallots.

- - Check back on the butternut squash and flip, toss them around so that they are fully roasted all over.

- - Add about 10 more minutes (air fryer method) or 15-20 in the oven.

- - Once butternut squash is crispy and roasted, add to the pan with greens and onions.

- - Add another drizzle of Garlic Expressions and gently toss the salad.
- Step 16
- - Portion out warm salad to serving bowls and top with Idyll Farms garlic herb goat cheese.
- Step 17
- - Layer with additional protein, optional.

- - Drizzle with balsamic glaze, optional but SO tasty!
