The ultimate pasta dish when you want something super decadent but also not super heavy. This whipped honey goat cheese spaghetti with crispy jalapeño honey delicata squash and chili rubbed pistachio is entirely going to make it feel like you’re dining at a fancy restaurant, but in the comfort of your own home ;). It’s a great meal for an at home date night when you’re snowed in this winter, because we all know that’s not too far off. Entirely gluten free and plant based (not vegan because of the honey) but oh so delicious. The flavor combination in this dish is ridiculous and I HIGHLY recommend especially if you like a little spice with your date night :).
Whipped Honey Goat Cheese Spaghetti w/ Crispy Jalapeno Honey Delicata Squash and Chili Rubbed Pistachios
The ultimate comfort meal. This would be a superb dish to make when you have family over and there's a handful of vegetarians or anyone gluten free. It will knock their socks off. Plus, it takes about 30 minutes to throw together, so what's not to love!

Ingredients
- 1 box of Banza spaghetti
- 1 small log of Montchevre honey goat cheese
- 1 tbsp fresh garlic, minced
- 1 tbsp lemon juice
- red pepper flakes to taste
- black pepper and salt to taste
- 1-2 delicata squash, sliced in half and seeds scooped out, then sliced in about 1
Directions
- Step 1
- WHIPPED HONEY GOAT CHEESE
- Step 2
- - Peel the garlic clove and add to your food processor (could also do by hand and whipping vigorously, but if you have a food processor, I HIGHLY suggest using it for this)
- Step 3
- - Add in the honey goat cheese, lemon juice, red pepper flakes and salt and pepper.
- Step 4
- - Boil your water for the spaghetti.
- Step 5
- - In a nonstick or cast iron pan, add the Garlic Expressions dressing and marinade.
- Step 6
- - Then add in the sliced delicata squash and turn the heat up to medium.
- Step 7
- - Add a few splashed of water to ensure that the delicata are browning up nicely.
- Step 8
- - After you notice that they are starting to crisp, add your drizzle of jalapeno or regular honey over the top.
- Step 9
- - Cover your pan and let them brown for about 5 minutes. Then turn each delicata ring over to the other side.
- Step 10
- - Do this until your squash rings are nicely brown and crispy!

- - Add your pasta to the pot and let cook for about 7 minutes.
- Step 12
- - Reserve about 1/2 cup of pasta water. Add about 1/4 cup to the delicata pan which will make your pan super smokey, but will add much flavor and soften up your squash just a tad.

- - Add the other 1/4 to the whipped honey goat cheese batter.
- Step 14
- - Drain your pasta and add the whipped honey goat cheese over the top. Lifting and folding the pasta into the whipped cheese until all the spaghetti is lightly coated.
- Step 15
- - Then remove delicata from heat and layer them on top of pasta.
- Step 16
- - Sprinkle with fresh parsley, parmesan cheese and sea salt flakes.
